Can I use this device to wirelessly connect 16 laptops to one monitor? Thanks

These extenders are set with a factory one-to-one pair. You would have to switch each computer (physically or with a switchbox) to the sending unit.

I need to connect a single PC to 2) large-screen monitors in a conference room. The PC is often moved to different parts of the room so VGA cabling and switchboxes are impractical. Is it possible to set up one sending unit and two receivers to connect both monitors concurrently?

The sending and recieving units of this extender are factory paired, and can't be connected to multiple recievers, however if both displays are meant to show the same images, you can use a VGA splitter from the Recieving unit to the two monitors. (Assuming that you do not often need to move the monitors as well)

Can this work with Mac?

Yes, since there is no software involved this would work with any mac that uses VGA for video and PS/2 for keyboard and mouse.
